Couscous is a great rice alternative. It can adapt to many flavors and it is very easy to make. What is couscous? It is sometimes called kusksi or kseksu – is a traditional North African dish, made from small steamed granules of rolled semolina. Which is the same grain as pasta.

Couscous is actually better than rice and quinoa when it comes to grains. It is less than 200 calories per cup. Another benefit is that its preparation requires little more than the addition of water and fluffing with a fork. For whatever reason, this grain was not introduced to America, and if I am being honest, it can be hard to find in a regular grocery store. My hope is that we all become more aware of other grain options and integrate them seamlessly into our meals. :

I make this particular recipe often with a nice baked chicken and a side salad. It always pairs well with a glass of white wine as well.

Was my family skeptical when I told them I wanted to try out a new Couscous recipe? Yes, they were, but they trusted me. All but one enjoyed it, but their chief concern wasn't the flavor it was the texture.

The texture of the tiny granules bothered them and they weren't able to enjoy the meal. I was a little annoyed at them for trying it, but then I was thankful. This person was trying new things because of me and my cooking. That meant they trusted me in a way.

I was very caught off guard when this recipe was requested for. I have been cooking this for the past 4 years now. I am glad my friends and family enjoy this comfort food sans the calories.

That's what we all wish for comfort food that will make us feel nice and cozy on the inside. You can also eat this alone.

I advise chopping the vegetables in this recipe a little bigger and it will be more filling. Paired with or without meat, this recipe is still filling.

Couscous Pilaf Recipe

Ingredients

  • 1- Tablespoon Olive oil

  • 4-Baby carrots diced

  • 1-Small celery stalk finely chopped

  • 1-Small garlic clove minced

  • 1-Small onion finely chopped

  • 1/2 Teaspoon-Sea salt

  • 1/4 Teaspoon-Pepper

  • 1-8oz. Chicken Broth

  • 1cup- Couscous


Cooking Directions


1. In a small saucepan, heat the olive oil over medium heat.

2. Add diced carrots

3. Add finely chopped celery

4. Add finely chopped onions

5. Add minced garlic

6. Add salt & pepper.

7. Stir ingredients for 6-8 minutes or until garlic and onions are translucent.

8. Add Chicken broth; bring to a boil.

9. Stir in Couscous.

10. Remove from heat; cover and let sit for 5-8 minutes. Uncover. Fluff with a fork. Season with salt and pepper.
