Just because the season has changed doesn't mean we still can't enjoy eating something on the healthy side. I came across this recipe when I was browsing and Australian recipe website. At the time I had the ingredients on hand and thought what could it hurt to try something new. Boy was I right. This was a delicious meal. :

This is also a very inexpensive meal to prepare. Although the prep time is 24 hours for the marinade and and hour for the cucumber salad, it is a fairly simple meal. Let me know in the comment section how it turned out for you.

Grilled Salmon with Cucumber Salad Recipe
Fish Ingredients
4 (6oz.) Salmon steaks,scaled
1 large garlic clove, minced
1/4 Cup fresh coriander, finely chopped
1 Tablespoon mustard
1 Tablespoon Ketchup
1 teaspoon Tabasco sauce
1 Tablespoon white wine vinegar
1 teaspoon granulated sugar
1/4 teaspoon salt, to taste
1/8 teaspoon pepper, to taste
2/3 Cup Olive oil
Fish Cooking Directions
Leave skin on the Salmon and place it in a shallow dish.
In a small bowl, blend together garlic, coriander, mustard, ketchup,Tabasco,vinegar,sugar,salt and pepper, then gradually stir in oil. Set aside 1/4 Cup marinade.
Pour remaining marinade over the Salmon and leave it in the fridge overnight (no longer than 24 hours)
When ready, take Salmon out of marinade and grill until cooked. (15-20 min.)
Brush with extra marinade as it cooks.
Serve hot with cucumber salad.
Salad Ingredients
2 Cucumbers
a dash of salt
dash of pepper
1 teaspoon fresh mint, chopped
2 Tablespoons plain greek yogurt
Salad Prep Directions
Peel cucumbers, slice thin.
Place in colander and sprinkle with salt.
Let stand for 60 minutes.
Heat grill or Barbecue
Gently squeeze the liquid from the cucumbers
Add pepper and chopped mint. Mex well.
Stir in yogurt.
Serve and enjoy Grilled Salmon with Cucumber Salad
