Cabbage rolls were introduced to me when I worked as a teacher's assistant in our high school restaurant.

It was student-run. We all had our duties, and it taught us how to run a business. At the end of the year, we got to close down the restaurant and host a dinner party. The theme for the party was Your Culture, Your Way.'
Each person was to cook 1-2 dishes from their culture. I was excited. I knew everyone would want to taste my cornbread and collard greens. One of my friends made a roasted duck. Another was a sweet pudding and my Hungarian friend made cabbage rolls.
After the first bite of this Cabbage Rolls Recipe, I was hooked. I asked her who made them, and she told me her grandmother would make them every weekend. A few weeks later, I went over to her house and her grandmother happened to be there and she showed me how to make them. That was over 20 years ago. I modified the recipe and used three different types of meat and a different sauce for the cabbage.

Cabbage Rolls Recipe

Ingredients
1 Head of Cabbage
2 Cups of Rice
1 Pound Ground Beef
5-6 Pork Neck Bones
1/2 Pound Pork Sausage
1 Cube of Beef Boullion
1/2 Cup Brown Sugar
Cooking Directions
1. Put neck bones in a pot and boil on low for 45 minutes. Set aside. The de-bone. Set aside.
2. Mix pork and beef in a medium saucepan until pink. Cover and Set aside.
3. Wash the cabbage. Cut the stern/core of the Cabbage. Slice in half. Put in a pot with 2 cups of water for 6-8 minutes until cabbage is slightly tender. Put in a strainer. Set aside.
4. Cook rice per package instructions. Set aside.
Cabbage Roll Assembly
Once the cabbage has cooled peel and seperate the leaves. Take the cabbage leaf in hand. In the other, take a Tablespoon and put a tablespoon of each item(Pork/Meat combo. Neck bones, Rice) into the Cabbage. Tuck the corners of the cabbage leaf. Roll it gently and Place it in a casserole dish leafy side down.Reapeat the process until you have no more ingredients, or you have filled your casserole dish. Boil 2 cups of water with one beef boullion cube. Pour the water into the casserole dish. Sprinke with brown sugar. Cover with foil. Cook at 325 Degrees F for 15 minutes then 375 degrees F for 35 more minutes. Take out. Let cool. Serve with remaining rice.
