I don't know about you, but for me, Summer has a refreshing quality to it. I always welcome the season with great fondness and openness for adventure. Because we all know an adventure is best gone on in the Summer. Cookouts, shorts, burgers, and tank tops. Those things instinctively make me crave the warm weather.


Among cooking savory meats, during warmer weather days, I enjoy making dishes that are filling yet light. A side effect of that is my recipes are pretty nutrituous and healthy. Low in calories and delicious. I love a great Summer salad. I pity anyone who has not had the privilege to enjoy a salad. :

This month I want to share some yummy recipes I think will keep you and your family in a great Summer mood. Afterall, food holds us together. No one can resist digging into a salad with colorful summer fruits. The unique dressing is what makes this salad a crowd-pleaser. I get compliments whenever I serve it, especially when I put it on the table in a melon boat.


It is a definite warm weather treat.

Summer Melon Salad


Ingredients


Summer Melon Salad virtual shopping list

  • 1 Cup Water

  • 3/4 Cup Sugar

  • 3 Tablespoons lime juice

  • 1-1/2 teaspoons chopped fresh mint

  • 3/4 teaspoon aniseed

  • Pinch of salt

  • 5 cups cubed watermelon (abour 1/2 medium)

  • 3 cups cubed cantaloupe (about 1 medium)

  • 3 cups cubed honey dew melon (about 1 medium)

  • 2 cups peach slices (About 2 peaches)

  • 1 cup fresh blueberries


Cooking Directions


1. In a small saucepan, bring the first 6 ingredients to a boil. Boil for 2 minutes exactly; remove from heat,

2. Cover and let cool completely.

3. Combine the fruit in a large bowl

4. Add syrup and stir to coat.

5. Cover and chill for at least 2 hours, stirring occassionally.

6. Drain before serving and enjoying this Summer Melon Salad!!

Yield: 12-14 servings
