What is Seafood Bisque?

seafood Bisque

Seafood bisque is a smooth and creamy soup traditionally made with shellfish, such as lobster, shrimp, or crab, combined with a rich broth and cream. The word “bisque” comes from the French cooking method of preparing the soup, where the seafood is simmered in stock, pureed, and then enriched with cream for that luxurious finish.

This dish not only embodies the flavors of the ocean but also pays homage to culinary techniques that elevate simple ingredients into something extraordinary. Perfect as a starter for a dinner party or as a comforting meal on a chilly evening, seafood bisque is a recipe that never goes out of style.

Ingredients

Good Thyme Gal's Creamy Seafood Bisque Recipe digital shopping list

  • 1 tablespoon olive oil

  • 1 tablespoon unsalted butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 medium carrot, diced

  • 1 celery stalk, diced

  • 1/2 cup dry white wine (optional)

  • 4 cups seafood stock or fish stock

  • 1 bay leaf

  • 1 teaspoon dried thyme

  • 1 pound mixed seafood (such as shrimp, scallops, and crab meat)

  • 1 cup heavy cream

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

  • Lemon wedges (for serving)

Cooking Directions

1. In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened and fragrant.

2. If using wine, pour it into the pot and stir, scraping any browned bits from the bottom. Let the wine simmer for a couple of minutes until it reduces slightly.

3. Pour in the seafood stock and add the bay leaf and dried thyme. Bring the mixture to a simmer and let it cook for about 15-20 minutes to allow the flavors to meld.

4. Stir in the mixed seafood and continue to simmer for another 5-7 minutes, or until the seafood is cooked through and opaque.

5. Remove the bay leaf from the pot. For a smoother texture, you can use an immersion blender to blend the soup until smooth. If you prefer a chunkier bisque, you can skip this step or blend only half of it.

6. Stir in the heavy cream and season with salt and pepper to taste. Heat gently until warmed through, but do not let it boil.

7. Ladle the bisque into bowls, garnish with fresh parsley, and serve with lemon wedges on the side. Enjoy this creamy delight with crusty bread or a simple green salad.

Tips for Perfecting Your Seafood Bisque

- Choose quality seafood: Fresh or frozen seafood works well, but be sure to choose high-quality ingredients for the best flavor.

- Customize your bisque: Feel free to experiment with different types of seafood or add spices like Old Bay seasoning for an extra kick.

- Make it ahead: Bisque can be made ahead of time and reheated before serving, making it a great choice for entertaining.
