The best part? Popovers are simple to make, require minimal ingredients, and can be an affordable treat for everyone. So, whether you’re making them for breakfast, a snack, or a fun weekend brunch, let’s celebrate food, community, and the joy of baking together!
What’s a Popover, Anyway?
Popovers are named for the way they “pop” over the edge of the pan while baking, creating their signature puffed-up, hollow center. They are made from a thin, eggy batter that bakes into a beautifully crisp outside and a soft, almost custardy inside. Adding blueberries gives them a burst of natural sweetness and extra nutrients.
Popovers are often compared to Yorkshire pudding (a classic British dish), but instead of being served with gravy, these beauties are delicious with butter, jam, or even honey.

Easy & Equitable Blueberry Popovers Recipe
Makes: 6-8 popovers⏳ Time: 35 minutes
Ingredients:
1 cup all-purpose flour (or whole wheat for extra fiber)
1 cup milk (dairy or plant-based)
2 large eggs
1 tbsp melted butter or neutral oil
½ tsp salt
½ cup fresh or frozen blueberries (no need to thaw if frozen!)
1 tsp vanilla extract (optional, but adds a great flavor)
1 tbsp honey or maple syrup (for a touch of natural sweetness)
Instructions:
Preheat the oven to 425°F (218°C). Place a muffin tin or popover pan in the oven to heat up while you prepare the batter.
Blend or whisk the batter – In a bowl, whisk together the flour, milk, eggs, salt, vanilla, and melted butter until smooth. The batter should be thin—almost like pancake batter!
Carefully remove the hot pan from the oven and grease it lightly with butter or oil.
Fill the cups – Pour the batter evenly into the muffin tin, filling each cup about halfway.
Add the blueberries – Drop a few blueberries into each cup. They’ll sink slightly into the batter as it bakes.
Bake for 15 minutes at 425°F, then reduce the heat to 350°F (177°C) and bake for another 10 minutes.
DO NOT open the oven while baking! This helps the popovers rise properly.
Serve immediately – Enjoy them warm with a drizzle of honey, jam, or a dusting of powdered sugar!
