Cinco de Mayo is over, but that doesn't mean the partying and delcious eats has to stop.

This month's recipes have been dedicated to some great Mexican dishes I am sure you will want to reuse over and over again. Taco Tuesday night can seem redundant. It is always nice to have different Mexican food recipes handy. I also like this because it is a marinade.
Marinades are a wonderful way to spice up your meat without having to inconvenience yourself. Just combine your desired spices with some oil along with your meat and let it sit for a few hours. Marinades can complement your food and bring your dish to life. This is a marinade I use for chicken when I am in the mood for a taste of Mexican without the calories. You can use any chicken pieces you prefer. :

Mexican Food is always a wonderful food alternative during the warmer months. Why? Most people enjoy being able to eat with their hands. This chicken recipe takes less than 10 minutes to prep and depending on how you cook your chicken it will be done in under 45 minutes.

*Season Chicken after cooking
*Add a 1/2 teaspoon of taco seasoning to the marinade to kick it up a notch.
*Serve with rice and black beans
*Can also be served as a filling for tacos.
Grilled Mexican Lime Chicken Recipe
Ingredients

1 Tablespoon of Olive Oil
2 medium Garlic cloves- finely minced
1/2 Tablespoon of Onion Powder
1/4 Cup of Mexican Beer
1 pound of Chicken (Pieces of your choice)
1/4 teaspoon of Salt
1/4 teaspoon Pepper
1/2 teaspoon of Chili Powder
1/2 cup of Lime juice
4 limes for consumption
Cooking Directions
1. In a Ziploc bag combine all ingredients (except the limes)
2. Let the chicken marinade overnight or minimum of 1.5 hours
3. Drain chicken well. grill, bake, or air fry until done.
